well this will be our first camping of the season! so i decided to make a pot roast, it s easy!
start a wood or coal fire, bank it down put the old dutch oven on the coals, a bit of oil in the bottom, flour your roast, slice some onions crush some fresh garlic, put it in the pot, brown the meat on all sides,carmelize those onions and garlic, add enough water to cover the meat, put the cover on and " forget about it" in a half hour turn the meat , if you want to add peeled potatoes and /or carrots quartered do it then, cover the meat, cook for another 30 to 40 mins and it should be done
i use a medium size bottom round roast, feeds 5 or 6 people nicely
it should simmer not boil! if it starts to boil, move some of the coals away,

I did the same thing with a BIG OL roast but I used beer insted of water. Was the best roast I had ever eaten......
