This is my DW s fantastic Potato Casserole recipe.
The main recipe isn t really a camping recipe but she figured out how to make it in her DO so we can enjoy it while camping.
POTATO CASSEROLE
TOPPING:
2 cups crushed Ritz crackers
« cup melted butter
Mix ingredients together and set aside.
CASSEROLE:
1 can Cream of Chicken or Cream of Mushroom Soup
« cup chopped Onions
1 pint Sour Cream
« tsp. Salt
¬ tsp. Pepper
« cup melted Butter
1 (32 oz.) bag frozen Hash Browns (cubed)
Ham and Cheese, optional
Paprika
In a large bowl mix soup, onions, sour cream, salt, and pepper together. Add butter slowly and mix well. Add remaining ingredients and mix well. Pour into a 13 x 9 x 2 inch greased baking dish. Sprinkle topping on. Bake 45 minutes at 350 degrees or until bubbly. Sprinkle with paprika.
Can be put together the night before and baked next morning.
DUTCH OVEN METHOD
Mix casserole together as directed above. Put in a dutch oven. For a double recipe I used a 12? dutch oven. For a 12? dutch oven use 8 ? 10 briquettes on the bottom and 16 ? 20 on the top. Stir every 15 minutes and cook until bubbly. About 45 ? 60 minutes for a double recipe. Add topping and let brown a bit. Sprinkle with paprika.

SimiRichWe did this recipe this past weekend and it was delicious. We cut the recipe in half and used the cubed potato s from the refrigerated section. It was yummy and we got to share it with Dave from PUT at our NNC Rally.

SimiRichWe call these " party potatoes," because we never have a party or family get together without them. They are the yummiest. I use the Durkees canned onion rings for the topping, and cheat and use two bags of frozen O Brien potatoes in the filling.

SimiRichReallygreen we used a 10" Dutch oven. We might have been able to use an 8" as well but my DW prepared this. All I did was to make sure the coals were ready and eat it. She used the Cream of Mushroom soup. We did had cubed ham, which we really liked.
