Title: Jalapeno-Infused Fruit Salad
Post by: joe2 on Sep 28, 2003, 07:05 PM
 Salad
1 Papaya, peeled, seeded, and cut into 1-inch pieces
8 Strawberries, stemmed and cut in quarters
2 Kiwis, peeled and sliced thickly
1 Small cantaloupe, sliced or cut into cubes

 Dressing
 6T Orange juice
 4T Fresh lime juice
 5T Cilantro, chopped
2 Jalapeno peppers, seeded and minced
 1T Sugar
 2T Vegetable oil

For the fruit salad: Toss all the ingredients together in a bowl. For the dressing, mix ingredients into a small bowl, then pour over fruit salad and toss gently. Serve at once.

This is a change from the usual summer melon-grape-pineapple fruit salad! If you re put off by the idea of jalapeno dressing-just try it once! You may be convinced.

joe2I wish I lived in California and could consistently get good, ripe, tasty fruit for this recipe!  Our papayas (around Philly) are small, tastless and almost worthless... [:(]
