Here's a recipe my wife and family enjoys whether camping or not! If I'm making it at the campground, I will substitute canned potatoes and canned carrots to save time. You can use a whole chicken, but I try to cut the Fat and Calories by using Chicken Breasts
2 lbs Chicken Boneless Breasts
32 oz can or 3 14 oz cans of Fat Free Chicken Broth
1 medium Onion, Diced
3 stalks of Celery, sliced
4 carrots, sliced
4 med potatoes, large dice
4 oz Fresh or canned Mushrooms, sliced
4 tablespoons Butter or Margarine
salt & pepper to taste
1 cup Milk
Boil Chicken Breasts in broth until done, remove chicken and cut up into chunks, set aside. To Broth add Onion, Celery, carrots, potatoes, and mushrooms. Cover and cook until desired tenderness. Add chicken, Butter, and Salt and Pepper. (I omit Salt to allow people to flavor at table) Bring to a boil, Reduce Heat, Add milk and simmer for an hour. (I've cut the simmering to as little as 15 minutes and it still tasted great!) Do not boil after adding the milk.
You can also cook at home and reheat upon arrival at the CG. Like most stews it tastes better the second day and saves having to cook a meal while setting up camp!
