Title: Black Beans, Rice & Kielbasa

I did this Friday evening as a Scout event for the staff. I was just planned as a test meal and if I'd made a double batch, it would have disappeared. You can substitute a different meat and I think I'm going to try some pork that I simmer in the enchilada sauce, onions and peppers. Then I'll add the rest of the ingredients and cook.

Black Beans, Rice & Kielbasa
 
1 cup uncooked white rice
1 small yellow onion
1 small green pepper
1 (15 ounce) can black beans, undrained
1 (10 ounce) can enchilada sauce

2 cups water
1 Kielbasa, thinly sliced
 
Chop the onion and pepper. In a 10 inch DO add all the ingredients and stir to mix. Heat over 10 coals with 3 on top until boiling; remove 3 coals from bottom and the two from the top and simmer until all water is absorbed, then enjoy. This can easily be doubled or tripled for a 12

Thanks for the recipe Moose.  I have a notebook filled with all the DO recipes.  

One question on this one.  Did you use Minute Rice or long grain rice?  You can probably use either one but long grain will have to cook a lot longer.
