Title: eggs in a bag
Post by: Elly on Aug 14, 2005, 09:38 AM
We tried these yesterday and then hubby had to have one again today.

Have people write their name on a QUART SIZE FREEZER BAG with permanent
marker.

Crack 2 eggs (large or extra-large) into the bag  (not more than 2) shake to
combine them .

Put out a variety of ingredients such as: cheeses, ham, onion, green pepper,
tomato, hash browns, salsa, etc.

Each guest adds prepared ingredients of choice to their bag and  shake,
Make sure to get the air out of the bag and zip it up.

Place the bags into rolling, boiling water for exactly 13 minutes.
You can usually cook 6-8 omelets in a large pot.  For more, make
another pot of boiling water.

Open the bags and the omelet will roll out easily. Be prepared for
everyone to be amazed.

Nice to serve with fresh fruit and coffee cake; everyone gets involved in the
process and a great conversation piece.

FOR THOSE OF YOU INTERESTED --- WE MADE THESE OVER THE WEEKEND AND THEY TRULY TURNED OUT EGG-CELLENT (OK, IT'S EARLY) --- I DON'T THINK I WOULD DO OMELETS THE REGULAR WAY EVER AGAIN -- ...........WE HAD A VARIETY OF THINGS, SUN DRIED TOMATOES, CREAM CHEESE (A MUST), CHEDDAR, ONION, PEPPERS, MOZZ CHEESE, SHARP CHEESE ETC --- DELICIOUS!!

We always make eggs that way on girl scout camping trips, saves lots of clean up time. :p

My daughters girl scout troop also did these at each campout.  Everyone enjoyed them because you could make your omelet your own way and then there was very little clean up afterwards.  They are also good if you add a small amount of salsa and sour cream after omelet comes out of the bag.

If you use a tortilla as your place, no cleanup or waste.

Just tried this recipe this morning at home.  Turned out really well.  It will become a regular part of our camping "repertoire"!  Thanks.

These sound great! I'm definitely trying these on our next camping trip. DBF only like his eggs scrambled (vs. fried), so these sound like they'll make both of us happy. :)

13 min sounds like a long time for eggs

13-15 minutes is about right. Remember you're using water as the coooking medium and it's at a lower temperature than a pan on the burner.

Another reminder is to make sure the tops of the bags stay inside the pot or they might melt. I've seen it happen.

Will they cook correctly if a little milk is added to the mixture?

I've gotta be the worlds worse cook. I tried this, this morning.........what a mess :eyecrazy: . Just reinforces what I've always said, "When it comes to cooking, I can screw-up boiled water" :( .

I'm glad that my wife was at work. She would've giggled at me :p .

Yep - tried them this weekend with the milk added - all was OK!  Makes the eggs go a little farther.

I also like to add pepper-jack & bacon bits to mine.

Sealing the bag does definately help but also don't forget to push out the air in the bag first or it may explode on you!  :)

We made these this weekend for our inaugural campout of the season.  We made 9 bags, each taylored to how that person wanted their's done.  They all turned out wonderful and everyone was amazed at the concept. This will be a keeper in my camp recipes.

Gee! What a concept :p  DUH!! :book: .........I guess I'll try it again. I think that's what happened to me :eyecrazy: . I may have left air in the bag. All I know is when I went back in the kitchen to check on it, I had egg soup :J . I know that I sealed the Zip-Lock bag. The air in the bag must have expanded and opened the bag. Maybe I should stick to scrambled eggs or donuts & coffee  :p .

****later-------------------------
OK.......I just went back to recreate the scene of the crime. I took out the pan that I used before (and hasn't been used since I took it out of the dishwasher). I found bits of plastic melted around the inside of the pan. HMMMMMMMMMM!!! I guess I need a bigger pan :p .

I got out a bigger pan (actually our pressure cooker pot) and just finished my omelet. Definitely not a 1 person job (at least.....this person) I found it difficult to get the eggs in the bag without making a mess. It was a great omelet but scrambled eggs are still easier :D (for me). Then again, overhauling an engine is easier than cooking eggs (for me). :D

I think that I will stick to greasing wheel bearings and let my wife do the cooking :D ..............

Removing the air as mentioned is important, but also make sure you use freezer bags. The thin bags fall apart or melt.

The kids and I made these this past weekend and they turned out super.  The boys couldn't believe how good they tasted.

Make sure you use heavy duty freezer (quart size) bags.  Do not use off brand because they are thinner.  Also, make sure you get as much air out of the bag before boiling.

We have been doing this for years!! Try using Egg Beaters, it eleminates the mess of egg shells. I love trying the different kinds of egg beaters, and then adding my own condiments to them. I  also like making them at home a head of time so that I can relax with my coffee in the morning and not have to worry about preparation!!
