Thanks Moose! I was pretty sure I knew why mine didn't taste enough like yours...I took out all of the seeds from the jalepenos! Can't wait to try it again with more seeds!

Kristi when you cook the jam, the foam has some of the seeds with it. Towards the end of cooking, there are more seeds than foam. You want the color go to sort of a translucent color. Then you know you're real close.Moose

I use the boxed powder and they are cheaper at Walmart. I buy the 3 pack.
