Before you get into relocating it, you might try installing a 12 volt digital version. From what I've read here, they are much more accurate and have a closer "tolerance" for the settings and how the kick the furnace on and off.

A lot of people find the location difficult and move it.  For some, it's too close to the door, so it comes on every time the door is opened.  For others, bending over or kneeling down to adjust it is unpleasant.  It can be moved to anyplace the wires can be safely strung.

Before you replace it, though, take the cover off and look for a slide inside that moves independently of the temperature setting.  This slide controls latency, which is essentially how long the furnace will run before shutting off.  Most come from the factory set to run until it's too darn hot, then stay off until you're half frozen.  By reducing the latency, it will start and stop more often, but it won't swing from oven to fridge.
