Title: Tasty, Low Fat Taco Meat

I use this reciepe for our taco's. I like to make big batches and freeze it. My daughters like me to make Quesidillas with it. Enjoy........Ed C.

Taco Filling

This reciepe freezes well. Can be used for taco's, taco salads, or even quesadilla's.
Makes 6 cups.


Ingredients:

1 tbsp.      country crock margarine
3 cups      finely chopped onions (3 med. onions)
6 each      cloves of garlic
2 each      fresh jalapenos fine diced (optional)
2 tbsp.      chili powder
1 tbsp.      ground cumin
1 tbsp.      ground coriander
2 lbs.      lean ground beef (96/4 % lean)
1 each      28 oz. can crushed tomatoes
salt      to taste

Heat margarine in a large skillet over med. heat. Add onions, cook until softened, about
5 minutes. Add garlic, jalapeno, chili powder, cumin, and coriander. Cook stirring 1
minute.
Add ground beef, cook, breaking up meat with a wooden spoon until no longer pink.
About 5 minutes. Stir in tomatoes, cook stirring occasionally, until liquid has evaporated,
15 to 20 minutes. Season with salt to your liking. Enjoy !!!
