We plan to spend a week in april on the Gulf at ST. Andrews campground. I am hoping to pick up some fresh shrimp or seafood and am looking for some easy camping recipes to try. Does anyone have any ideas? Has anyone been down that way and knows where to buy good fresh seafood. Thanks for taking the time to share.
I don't know the area but one of my favorite shrimp recipes is BBQ shrimp. It's the easiest and the tastiest. You can do it as simply (alluminium foil over the cook surface and brush on the BBQ suace) or as fancy (skewers of shrimp and/or veggies basted with BBQ sauce) as you like. Shrimp cooks very quickly over a fire or on a grill so any veggies need to be pre-cooked or very, very small. Just my opinion and there are lots more really good recipes out there.

Here's an easy Shrimp Gumbo reciepe you'll like and it can be made while out camping.........Ed C
1 tbsp. Canola oil
1 med. Onion (chopped)
1 med. Tomato (diced)
1 lb. Cooked chicken breast (diced)
1 pkg. Zatarains Gumbo mix with rice
1 lb. Cooked med. sized shrimp
1 lb. Frozen Okra (can use frozen peas instead)
Saute onions in oil until translucent. Add diced chicken and tomatoes and cook briefly. Now add the Gumbo mix and 6 cups of water. Simmer 10 minutes then add the Okra and simmer 5 minutes, then add the shrimp and simmer 10 minutes. Then serve and enjoy.
my husband and son like it when I saute it in a bit of olive oil and fresh garlic
you can also add chopped roma toatoes and pour it over angel hair and add some fresh parmasian cheese
We skewered shrimp and scallops over the campfire last year. Yumm...the scallops take a wee bit longer than the shrimp, they go on the fire first.
For marinade we used equal parts lemon and lime juice and a bottle of sugarless (not sweetened) or low sugar
orange marmalade.
I like to use one of the Lawry's 30 minute marinade, citrus or mediteranian flavored, add some fine diced red, yellow, orange, bell peppers and fine chopped green onion to taste with the shrimp.
Let everything marinade in a skillet for at least half of an hour.
While the shrimp is setting, I cook some rice and when it is done, I cook the shrimp mixture and put it over the rice in bowls.
Cooking the shrimp takes very little time, just until they are pink through out.

Get Some Large Jalapenos, Cut Off The Stem End And Remove Most Of The Seeds. Stuff Them With Shrimp And Wrap A Slice Of Bacon Around It And Hold In Place With A Toothpick. Place On A Hot Grill And Cook Until The Bacon Is Done.
You're getting fresh shrimp? Peel, devein, boil for a few minutes. Might be easier to peel after boiling. Chill in refrigerator or cooler. Get out the cocktail sauce and have to. Quick, easy, delicious. Use as an appetizer or combine with other dishes for dinner.
