Ok I got this problem with a leaking roof. What my main question is does anyone know of or has plans on the roof of a Coleman tent trailer.
Is there a Book out there or something on how to remove and install it.

I'm not familiar with what roof your camper is sporting, but if it's the old plywood skinned on both sides with aluminum, for the side, front and rear panels, and then an aluminum glued to rigid foam insulation for the top, you can take it apart sort of, and re-plywood it.
Books and plans? Doubt it. Typically the metal edge trims unscrew, and that exposes the screws and staples that hold the front, sides and back to the top and to each other.
This is a HUGE job, so consider how much of it really needs to be done, and to what level. Many times you can reseal leaks, repair just the damaged area, and be back in business.
My '87 Starcraft had a completely rotted out front panel and that was rotted into the front of the side panels about 18" and somewhat into the top. Plus, my whole ceiling veneer was ruined down the middle. I took just the front areas apart and installed new plywood. Once it was back together, I redid the veneer ceiling by peeling off all the rotted paneling, and all the vinyl wallpaper that was still on the good sections and went right over it with 1/8" thick white Abitibi wall board like you see in public restrooms. Once finished, it all looks very original and you wouldn't know it's been done.
