 I have made this many times and my family loves it.  (In fact, I m cooking it right now)
 
 
 2 1/2 lbs chicken parts (I use whatever chicken I have on hand, breasts, or a whole chicken cut up)
 1 t. ginger
 flour
 salt and pepper
 
 4 T. margarine
 1/4 c. soy sauce sauce
 2 T. red wine vinegar
 1/2 c. water
 1/4 c. brown sugar
 1 can (15 oz) crushed pineapple
 
 1.  Dredge chicken in flour, seasoned with ginger, salt and pepper
 2.  Melt butter in electric skillet and brown chicken at 375 degrees
 3.  Mix soy sauce, vinegar, water and brown sugar in bowl.  Pour over chicken.  Spoon pineapple over top.
 4.  Cover and simmer at 225 degrees for 50 min.  Baste occasionally.  Serve over rice.
