Golden Harvest Soup

This is a nice and easy winter soup recipe that almost every one I've served it to has loved.   The prep time isn't much, nor is the cooking time, and with a salad and rolls is a perfect meal.
 
Golden Harvest Soup
 
4 cups chicken broth   (or water)
2 cups sliced carrots
2 cups cubed potatoes
1 cup chopped celery
1 cup chopped onion
1 small packaged of mixed frozen cauliflower and broccoli
4 cups of milk
2 tablespoons flour
1 package of velveeta cheese  (I originally made this with the surplus govt cheese that was being given out years ago)
 
 
 
Bring chicken broth to a boil and add all the veggies except the frozen ones.   Simmer til they are crisp tender, then add the frozen veggies and cook for about 10 minutes more.  
Stir the flour into the milk and whisk until smooth, then add mixture to the broth and veggies and cook slowly, stirring often til the soup thickens.
Add the velveeta cheese, cubed, a little at a time, stirring it in til it's all melted.  
It's soup now.

Do you think is would work with regular cheddar or monteray jack?

yes, I know what you mean about the Velveeta, I don't care for it either, as a rule, but it works well in this recipe.   It might work with cheddar, but you know how oily that can get when it melts.   Maybe a colby cheese, I guess you'd have to experiment.  This recipe lends itself easily to experimenting anyway, I tried adding fresh spinach to it, and that worked pretty well.  Also, if company shows up just add some more potatoes to it, and a little more milk.   I used to work in a small restaurant here in the Wyoming MI area, and we always had a soup of the day.  I took the recipe to work, and the owner started throwing in whatever veggies were left on the all you can eat buffet from the day before, and it was a hit, we ended up serving it every day.  (I didn't care for the green beans so much tho.)
