If you are in Western NC, I would winterize.  Charlotte and points east, maybe not, depends how long it stays below freezing.  Places like Statesville and up the 77 corridor from there, winterize.

You have to make sure your onboard water pump doesn't have water in it.  I make sure all water is drained, including from the HWH, then pressurize the lines with air in the city water connection, and blow the faucets clear with the air in the system.  That may or may not be enough, these campers tend to have low spots which aren't the drains.

Again, you'll have to decide if the risk is worth it.  For instance, if I am still in the camping season (but not camping at that time) and the temp dips down to 27 overnight, but goes above freezing the next day, I am not going to worry about it freezing.  If it was hanging at 34 in the daytime and dropped down below freezing overnight, and repeated the above for a couple of days, then I would be concerned.

I would not want to take the chance of not winterizing.  If you don't do it and you get cold weather you will worry or be sorry.  I don't think draining the water out will be enough.  You should run antifreeze through the water system (if you have a water heater bypass it first) to be sure no water is left in the system. :)
