Chicken Taco Rice

While this was designed for a Dutch oven, it can be done on the stove top as well. As a matter of fact, it was done on our stovetop before I had a chance to do it in my Dutch oven, It is really easy and yummy. My wife said it was even better after stiring in the sour cream.

Chicken Taco Rice


Ingredients:
1 lb. boneless chicken breast, cut into strips or chunks
2 Tbsp. oil
1 13 oz. can chicken broth
1 8 oz. can tomato sauce
1 pkg. taco seasoning
1 12 oz. can corn, drained
1 green or red bell pepper, cut into strips

Old Moose, my family will love this one.  All it needs are some really hot jalepenos, to spice it up.

Moose, this recipe sounds really yummy. This has all the things my kids love in it. Will have to try it at our next campout. Keep given us recipes.
 
Moose, how many coals did you use on the top and the bottom? We usually wing it but Randy perfers to know how many are usually needed.  Would you use a 10 or 12 inch DO?

Jacqui, I am not sure whether a 10" or 12". It may fit in a 10", but maybe a tight squeeze. Paula did it on the stove at home and cooked it in a chicken fryer. If in a DO, I'd put 10 coals on top and bottom. It doesn't take long to cook.
