Dutch Oven Appetizer Recipe

Here is an appetizer recipe that could be done in an 8" DO. While we did it in a 10", it should easily fit  in the 8" DO. This is not my recipe, but it was mighty good and a bit spicy. We simmered it for a little over an hour to make the pork more tender. It was real tasty.
 
When Pigs Fly Appetizers
Ingredients:
4 Boneless Pork Chops, cut into 3/4-inch cubes
2 teaspoons Vegetable Oil
1 bottle (14-ounce) hot-style catsup
3 tablespoons Honey
2 tablespoons Lemon Juice
2-3 teaspoons hot pepper sauce
1 teaspoon dried thyme, crushed
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon lemon pepper


Preparation:
In a large skillet heat oil over medium-high heat, cook and stir pork cubes for 4-5 minutes or until pork is just done. Remove excess fat from skillet; reduce heat to low. Add remaining ingredients to skillet, stirring to coat pork cubes. Cover and cook about 1 minute or until heated through. Transfer to warm serving dish; serve with toothpicks.

Sounds good, but I would definitely have to substitute things for the hot/spicy items.. acid reflux and spice doesn't agree...:(

I was privileged to be at the potluck this weekend where Moose served this dish.  :D  It was delicious, and I don't think that it was vey spicy, but you could substitute regular ketchup and leave out the hot pepper sauce if you can't stand any spice at all.  You could also serve it on little rolls for a bbq-style sandwich.

My plans exactly, already modified it and printed it out to take home and put in my book of 1,000,000's of recipes that I always plan on making, but never get around to.;)

Nancy, do the unexpected. Use your DO upside down and make a pizza on the lid. Use the canned pizza dough. I made it by oiling and dusting the lid with flour, used Ragu, cheese and pepperoni. Use a DO lid stand and about 10 coals underneath and when you invert the bottom to become the top, put 18 coals on top. In about 30 minutes look to check. You'll smell it sooner. Use your pizza cutter on the lid and serve.

Bill, I put your pizza recipe in a separate thread so others will be able to find it.  Also, how 'bout sharing with everyone that delicious cherry/blueberry dessert you spoiled us with this weekend? :)

OOOHH, Cherry and blueberries?  both are my favorites.  Please share!!  I also have a new lasagna DO recipe that I adapted from my oven recipe.  We tried it this weekend and everyone enjoyed it.  I guess an empty DO tells you whether it was good or bad.  I was gonna type it out but I want to serve it at Pismo so I am going to wait a little while.:)

Well. I made the blueberry/cherry cobler in our DO in the oven and Dave paid me the highest of compliments. He tasted it and said "Moose would be proud." :D I don' t want to steal Moose's thunder, so I'll let him post the recipe, but man oh man, is it ever delicious and SIMPLE!!!!!
 
I can't wait to taste the lasagne too!!!!! Griffin loves lasagne so it could easily become a camping staple. I love this DO cooking! :p (licking my lips, not sticking out my tongue, Jacqui ;) )
