Candy Cane Cake

I receive e-recipies from "Family Time" (www.familytime.com) and this is one that was sent to me today. It fits perfectly into the Holiday season.
 
Prep Time:  20 Minutes
Cooking Time:  50 Minutes
Serves:  12
 
Ingredients
 
1 package Betty Crocker SuperMoist white cake mix
1-1/4 cups water
1/3 cup vegetable oil
3 egg whites
1/2 teaspoon red food coloring
1/2 teaspoon peppermint extract
white icing (below)
Crushed candy canes, or crushed hard peppermit candies
 
White Icing:
1 cup powdered sugar
1 tablespoon milk or water
1/2 teaspoon vanilla, if desired
 
Directions
 
1.  Heat oven to 350 degrees F.  Generously grease and flour a 12-cup bundt cake pan
2.  Beat cake mix, water, oil, and egg whites in a large bowl with electric mixer on low speed, scraping bowl constantly, until moistened.  Beat on medium speed 2 minutes, scraping bowl frequently (do not overbeat).
3.  Pour about 2 cups batter into pan.  Pour about 3/4 cup batter into small bowl; stir in food color and peppermit extract.  Carefully pour pink batter over white batter in pan.  Carfully pour remaining white batter over pink batter.
4.  Bake 45 to 50 minutes or until cake pulls away from sides of pan and top springs back when touched lightly in center.   Cool 10 minutes.  Turn pan upside down onto wire rack or heat proof seving plate; remove pan.  Cool completely, about 1 hour.  Spread with white icing.  Sprinkel top with crushed candy.
 
White Icing:
Mix all ingredients.  Stir in additional milk, 1 teaspoon at atime, until smooth and spreadable.

Joan, this sounds really good.  My neighbor made some Christmas bark with crushed candy canes and my kids devoured it.  I think I will try to make this.

Let me know how it turns out.   We will be camping Thursday through Sunday so I won't be able to try it.    Besides, I'm running out of time because I need to make my yearly Kalhua, Kalhua Truffels, Peanut Clusters, Mounds, and Fudge.  The Truffels are what takes longer, I can whip out the others in one afternoon.   Will you be at the Olema Ralley?   If so, I will probably have some of the candy there.   Other NNCers have had some and I always get asked for more.  We will see if there is any left after I give it out for Christmas gifts.

I will let you know how it turns out.  I probably won't get to it till next week.  This week is Christmas baking time.  Just came wack from Winco Foods with 6 bags of baking stuff.  
 
Yes, we will be at Olema.  I am really looking forward to beint a NNCer.  I hope there are a few more rallies planned for the spring.
 
Khalua truffels?  OOOh those sound heavenly.:D

Yes, and they are made with my home made Kahlua.  You can ask some of the other NNCers about my candy.  I will probably bring left overs to Olema.  I'll try to save some for you.  I had posted my Kahlua, Kahlua Truffels, Mounds, Peanut Clusters, and Fudge recipies last year.  Let me know if you want any or all of them and I'll e-mail them to you, unless people want me to post them all here again.

I made the cake for our Christmas dinner and everyone loved it, however it didn't rise very high. The directions said not to overbeat it so that may have been what happened. I have a large Kitchenaide mixer and beating it for the 2 minutes as the directions indicated may have been too much. BUT, it was still good and disappeared quickly, even the kids liked it! It was especially good with vanilla ice cream. It was easy to make and I think it is worth doing again. Hope yours turned out as well.

Thank you for the info.  Even though Christmas is over I still want to try it.  I have a bunch of left over candy canes that need to go somewhere.  Thank you for letting me know to be careful not to over beat.
