The wiffle tree is the thing that the lift cables hook on to, so that when you crank the handle the top goes up.:)

On Coleman/Fleetwoods (the only ones I have experience with) when you turn the crank you are turning a long screw that has a flat plate threaded on it to which the cables that lift the roof are connected.  Picture a screw drive garage door opener.  The threads of that long screw need to be lubed every once in a while - I do mine when the crank starts to feel stiff and hard to turn.
