Instead of the homemade dough i use at home, we buy the pizza shells.  First you fire roast your peppers and onions, cook your italian sausage - dh does this while I prep the roasted vegetables and prepare the other topping choices.

Next you take the shells and put top side down over the campfire and heat through, grill marks are nice, than take them off the fire and people can place whatever toppings they choose than place back over the fire till cheese melts.

Perhaps not quite a brick oven pizza, but they are sooooo good and have that nice smokey flavor.   My favorite is fresh roma tomatoes sliced and topped with basil and fresh mozzarella slices...mmmmmm I'm getting hungry.

Enjoy

One time when we had a power outage and I was getting ready to put frozen pizzas in the oven, we decided to try them on the grill. They were DELICIOUS! Made a cheap pizza taste better than the oven. As you said, it gave the cheese a really good smokey, not burnt, flavor, MMMMM!
