In some parts of the country, school cafes serve chilli and cinnamon buns or sticky buns for lunch.  Needs to be a mild chili to suit the palate of most children.  Anyone have a recipe they would like to share?

These sticky buns require quite a bit of work but are well worth the effort.  The recipe is from King Arthur Flour.  They sell a high quality sticky bun pan on their website if you need one, http://www.bakerscatalogue.com

 Sticky Buns

These buns feature a thick cinnamon filling, and a topping of rich, sticky sauce sprinkled liberally with pecans.

 Dough
 2 1/4 teaspoons instant yeast
 2 teaspoons vanilla extract
 1 cup warm water
1/4 cup Baker s Special Dry Milk or nonfat dry milk
 1/4 cup sugar
 3 tablespoons vegetable oil
 1 1/2 teaspoons baking powder
 1 teaspoon salt
 1 egg
3 1/2 cups King Arthur Unbleached All-Purpose Flour

 Filling

3/4 cup Baker s Cinnamon Filling mixed with 3 tablespoons water

 OR

 2 tablespoons butter, softened
 1/2 cup sugar + 1 tablespoon cinnamon

 Glaze

1/2 cup golden syrup OR light corn syrup
1 tablespoon rum or rum extract (optional FYI, our children prefer them without the rum - no accounting for taste).
 3 tablespoons butter, melted
1/2 cup Sticky Bun Sugar (for an ultra sticky, caramelized bun) OR 1 cup brown sugar
 1 cup diced pecans

In a large mixing bowl, or in the bowl of an electric mixer, combine all the dough ingredients, mixing to from a shaggy dough.  Knead the dough, by hand or by machine, for 10 minutes.  Allow it to rest for 10 minutes, then knead for an additional 10 minutes, till it s smooth and supple (though somewhat sticky).  Place the dough in a lightly greased bowl and allow it to rest for 1 1/2 hours; it ll become quite puffy, though it may not double in bulk.  You may also use your bread machine, set on Dough Cycle, toprepare the dough to this point.

While the dough is rising, prepare the glaze.  In a small bowl, whisk together the syrup, rum (if you re using it) and melted butter.  Pour into lightly greased 12x12x2"  sticky bun pan.  Sprinkle the Sticky Bun Sugar (or brown sugar) and pecans atop the glaze.  Set aside.

Turn the dough out onto a lightly floured or oiled work surface and roll into a 16x12"  rectangle.  Spread the Bakers Cinnamon Filling Mixture OR 2 tablespoons soft butter and cinnamon sugar on the dough, leave about 1"  of one of the long edges bare.  Starting with long edge covered with filling roll into a 16"  log.  Seal the roll on edge without filling.  Slice log into 16 pieces.

Place the buns in the prepared pan, cover the pan and allow the buns to rise until doubled in bulk, about an hour.   Bake the sticky buns in a preheated 375 degree F oven for 20 to 25 minutes, tenting them with aluminum foil for the final 15 minutes to prevent over-browning.  Remove the buns from the oven and invert them onto a cooling rack.  Scrape any of the sticky topping that has remained in the pan onto the buns.

 Yield: 16 sticky buns.

RamblingWreckMild chili, this is what I use at home because I do not like hot spicy chili. made this out camping on the camp stove or could be simmered in a dutch oven. the sweet spices in the chili can compliment the sweet rolls.

 Cincinnati Chili

2 1/2 lbs. Ground Beef (I use ground turkey or sometimes both beef and turkey)
 1 large can stewed tomatoes
 1 large Onion (diced)
1/4 tsp garlic pwder or 1 Tbsp garlic salt
 2 Tbsp. Chili Powder
 1 tsp ginger
 2 tsp. Cinnamon
 1 tsp. Allspice
 1 tsp ground cloves
 1 stalk celery (chopped)
1 large can dark red kidney beans
1 large can light red kidney beans
 Salt & Pepper to taste

In a heavy gauge pot - brown meatf , add onions, tomatoes, and beans
and bring to a boil. Reduce to a simmer and
all the spices let simmer 1 1/2 - 2 hours. Adjust with salt &
pepper to taste. Add celery shortly before serving.

Also semisweet chocolat can be added as well as worchester sauce and bay leaves. Remove Bay Leavesif chosen as an option, before serving.

Great served over spaghetti. Can be topped with chopped onions and/or grated cheese.
In Cincinnati the true enthusians have their Chili 1 to 5 ways:

RamblingWreckActually the original recipe for this chili is made without beans. We like beans and spaghetti so that is a no brainer for us forgot you all are not mind readers

 1. Chili
 2.Chili with beans
 3.Chili with beans and spaghetti
4.Chili with beans, spaghetti and cheese (either I like cheddar, but use parmesan if I do not have grated yellow cheese, also those taco cheeses that are already grated is good too)
5.Chili with beans spaghetti cheese and chopped onion

RamblingWreckThat Cincinatti Chilli is good.  I used to travel there for business.  I really liked the city and restaurants.  There was a rib place on the river that I think was associated with or a fan of Bob Hope.  I remember having several good meals there.  I remember also that there was Skyline Chilli and another big chain for Cincinatti Chilli...... good stuff.  T

The thing that cracked me up  and surprized me the most was that everywhere we went, someone was sneaking up behind us and tying on a bib.  That isn t something that would happen (without prior approval) in South Carolina without a weapon being pulled on you. (LOL)
