Stuffed Scallops

These are really easy to make and can be frozen to bring on a camping trip. I used 4" fluted steel desert cups.
 2 Cups small bay scallops(chopped up)
 1 Cup small shrimp(cleaned and chopped up, no tails)
 2 packages of crabmeat stuffing
 Red wine
 2 Tbsp Parmagian cheese(grated)
 2 Tbsp Mozzarella cheese(shredded)
 Mix the scallops, shrimp and stuffing in a bowl and add just enough red wine to make the mix pink
 Add both cheeses and mix
 Scoop the mix into the dessert cups(spray with PAM for easy cleanup)
 Sprinkle paprika on the top
 They can now be frozen. To cook, just thaw and place them over the fire. cook till they bubble and the edges are brown (about 20 min)
 Let them cool slightly so you can hold the cup
 Enjoy!
 This recipe makes about 12 servings.

This sounds like a really interesting recipe. One question tho.....what is, and where do you find, the crabmeat stuffing mentioned? Is it a dry boxed mix or what? Would like to take this the next trip but need just a little help. Thanks in advance.

The crabmeat stuffing is frozen in a plastic "sausage" casing about 3" in diameter. The supermarket by me has this in the seafood section in a freezer case(where they have frozen shrimp etc.) They are 8 oz or 12 oz packages. If you can't find them, you should be able to get it fresh from any seafood place. I believe it is bread stuffing, crabmeat, chopped red peppers, celery, old bay seasoning, parsley, and paprika.

I've never seen it at my market but then I haven't really been looking for it. Thanks for letting me know and I will check it out. Looking forward to trying this.

I'm going to try the recipe but will use my own crabmeat stuffing which is 1/2 onion, 1 - 2 cloves of Garlic sweated in 1/2 stick of butter, add the juice from canned Crab & a tbls of Lemon Juice towards the end. Grind up Ritz crackers , (I put in a gallon baggie and roll them with rolling pin), add drained crabmeat, parsley, a little oregano and mix in the butter/onion/garlic mixture. I use this for Stuffed Shrimp, stuffed fish, and stuffed clams (substitute canned minced clams for Crabmeat).
