 The following is borrowed from somewhere years ago...it s the best carp recipe I ve ever heard of.
 
 Carp Cooked on Live Coals
 
 1 river bottom carp
 1 1"  x 6"  or 8"  hardwood board about as long as the carp, preferably maple, which has never been painted or treated
 12 oz. mustard
 1 cup rocksalt
 2 tsp. meat tenderizer
 
 Do not bone, skin, de-scale, or de-head the carp.
 Spread the mustard evenly on the board.  Cover the mustard with the rocksalt.  Lay the carp on top of that, and coat it (top side only) with the meat tenderizer.
 Place the board with the carp on it on the live coals.  Cook for about an hour.  Do not turn over!
 When the carp seems to be done, pull what s left of the board off the fire, scrape the carp into the trash, and eat the board.
