 9 more days until I go to the lake! YYAAHHOOO!!!!!!!!!!
 
 Spring Break starts next Monday and I am going to work Sunday, Monday, Tuesday and Wednesday morning, then off to the lake Wednesday afternoon! I am not even sure if any of my family is going but I DON T CARE! [8D]
 
 I have meatloaf baking in the oven right now to take with us (will freeze it to take). Will make some Jambayla next week. Thinking about making some chili to take. Heck I am so excited I just can t even think of what all I want to cook in advance!!!

 ShirleyTI m very happy for you, very sad for me!!  Have to wait till May 1st...hopefully the snow will be gone...2 yrs ago they delayed opening cause there was still snow blocking the roads!!!!!!

 ShirleyTThat sounds like a great menu, even though I have no idea what jambalya is, but I m glad to see how excited you are!  We have to wait until May 1st weekend too.

 ShirleyTGood for you!!!   I m glad to hear that you re getting to go.  We still have snow and cold, but the weather man/woman is predicting some warming by this coming weekend.  Maybe it will be enough to help us get rid of the white stuff on the ground.  Then we can go camping too.

 That should take care of part of of the groceries and cooking! I will be able to sit back, relax by the campfire and play cards!

 ShirleyTGlad I m not the only one that gets so excited about going away.   Our first trip will be Easter Weekend.  I can t wait.

 ShirleyTJambalaya is a yummy Cajun rice dish.  They add all sorts of things: chicken, sausage (andouille preferred but kielbasa works fine), shrimp.....
 
 If you ever go to Nawlins (aka New Orleans - the city that has a love affair with food), see the if New Orleans School of Cooking is still operational.  I ve taken their half-day cooking " class"  twice.  It ends with a bottle of beer and a fork!

I will probably be chastised for putting a recipe in this forum...but I dont care! [8D]
 This is my first trip of the year and I am SSOOOOO excited!!
 
 I make this ahead of time and freeze it in the pan then pop it out of the pan and place it into a foodsaver vac bag and vacuum seal it and put it back in the freezer. By doing this I dont have to worry about it getting soggy in an ice chest. On the day we are going to have this for dinner I take it out of the ice chest (or freezer if the big fridge is running) and triple wrap it in foil. I leave it sit out to thaw and then place it in the hot coals of the camp fire or on the grill about an half  hour to hour before we are ready to eat. If you dont have a vacuum sealer you could prepare it in one of those disposable foil pans and then just heat it on the grill when you are ready to heat it up.
 
 I have to double this recipe when I make it for my family (not family as in me an DD, but family as in going to the lake with the family, doubled it will feed about 10 adults, 4 teenagers and 5 children [:D]).
 
 Ingredients    
 2 pounds skinless, boneless chicken breast halves - cooked and shredded
 2 (10.75 ounce) can  condensed cream of chicken soup
 2 (4 ounce) can diced green chiles
 1 onion, chopped
 1 pinch garlic powder
 1 cup chicken broth
 16 ounces shredded montery jack cheese
 12 (6 inch) corn tortillas
 
 
  Directions    
 
 1 Preheat oven to 350 degrees F (175 degrees C).
 2 Combine the chicken, cream of chicken soup, green chiles, onion, garlic, chicken broth in a large bowl
 3 In a 9x13 inch baking dish, layer the mixture, cheese and the tortillas like you would lasagna. Make sure to put a thin layer of the mixture on the bottom of the baking dish to prevent sticking. Leave enough cheese to layer on the top. After layering, place dish in the preheated oven and bake for 45 minutes to 1 hour, until cheese starts to brown and bubble. Let stand and cool for at least 10 minutes before serving!
 
 If you like sour cream you can add an 8oz carton to the mixture or just top your serving with sour cream.
