 This recipe is from a wonderful Italian cook named Mark Strausman.  Great one pot meal.  We cook it quite often when we go camping.  Can be served as a sandwich, over rice or noodles.  Best of all, you can drink the wine that s left over.
 
 Sausage and Peppers
 
 1/4  cup extra-virgin olive oil
 2   cloves garlic, thinly sliced
 1   large red onion, cut into 2-inch chunks
 2   red bell peppers, cored, seeded, and cut into 2-inch chunks
 2   green bell peppers, cored, seeded, and cut into 2-inch chunks
 4   fresh sweet Italian sausages
 1  cup milled or crushed canned Italian plum tomatoes
 1 1/2  cups dry red wine  
    Pinch of dried oregano
    Pinch of crushed red pepper
    Salt and freshly ground pepper  
   
 In a large skillet with a lid, heat olive oil over medium-high heat. Add garlic, onion, and peppers, and cook, stirring, until onion is translucent, about 5 minutes. Add sausages, and cook about 4 minutes more, until sausages begin to brown. Add tomatoes, wine, oregano, red pepper, and a large pinch of salt. Cover, bring to a simmer, and simmer gently,until the peppers are very soft, about 25 minutes. Season with salt and pepper to taste. Serve immediately.

 We just served this up to the family...  and it was the BEST!
 
 Sure was a hit!.  Little to none left over.... I will definetly be making this again in the future.

 slowpezGlad you enjoyed it.  I have several of his recipes that I ve collected over the years and all are exceptionally good.  This is the only one I ve taken camping though.

 slowpezI have a recipe very similiar to this, and depending on who s with us, I vary the sausage.  DH loves it with brats, DD wants hers with Italian sweet, and I like mine with smoked or Polish sausage.  However, I add lots of sliced jalapenos to mine, and serve them on sub buns.   We love them!    Thank you for reminding me about them, haven t had them for quite a while.

 wiininkweWe actually made it substituting Honey Garlic sausages for the Italian, which really turned out great.  You could smell the aroma through the whole house.  It smelled so good, the kids were sampling this stuff, an hour before supper was served... although I couldn t blame them for doing so.
