For my first post here, I d like to share a little recipe.  Bacon, eggs, and pancakes get old after awhile, so we like to eat breakfast tacos while camping.  Our favorite tacos are chorizo(Mexican pan sausage) and bean tacos:

For 2 adults and 2 young children:

1 package chorizo(Jimmy Dean or other pan sausage can be substituted)
 1 can refried beans
 1 package of tortillas

Crumble up the chorizo, or sausage, and cook it like you would hamburger meat.
After the meat is cooked, add the refried beans, stir, and cook until the beans are heated.
While the chorizo/bean mixture is cooking, heat tortillas on the other burner of your stove, either directly over the flame or on a griddle or comal.

Spoon the chorizo/bean mixture onto a tortilla, add cheese, chile sauce, etc, fold in half, and you re good to go.

If you can t get chorizo where you are, you can add chili powder, cumin powder, and other spices to the breakfast sausage.  Jimmy Dean sausage and chorizo tends to be leaner than other brands.

The nice thing about this recipe is it is a one pan recipe.  When camping, I prefer to use one pan recipes and or grill my food, easing cleanup.

For an even quicker recipe, cook the sausage at home, freeze it, and take it with you camping.  It will help keep the other stuff in the cooler or icebox cold.
