Fluffy Cornbread
Serves/Makes : 6
1 1/2 cups cornmeal
1/2 cup flour
3 tbsp brown sugar
2 tsp baking powder
1 1/2 cups milk3 eggs
1/2 cup butter
 
Preheat oven to 375F. Combine cornmeal, flour, sugar, and baking powder in mixing bowl. Add milk, beaten eggs, and melted butter. Mix and pour into baking pan. Bake for 25-30 minutes.

My recipe for imitation Marie Calendar's cornbread is to use a box of yellow cake mix and two boxes of Jiffy corn bread mix. Use all of the ingredients from both mixes and pour into a foil or parchment paper lined Dutch oven. Bake for approx. 25-30 minutes or until a toothpick or knife comes out clean when inserted in the cake. This disappears fast.
