DO Monkey Rolls

I think I may try this recipe while camping at Malibu RV Park over Memorial Day weekend:
 
Ingredients
 
1/2 cup granulated sugar
3 tsp cinnamon
1/2 cup butter (1 stick)
1 cup packed brown sugar
1 package 8 oz cream cheese1 1/2 cup coarsely chopped walnuts (optional)
2 cans 12 oz 10 count refrigerated biscuits
 
 
Directions
 
Spray DO with nonstick cooking spray.
 
Mix the granulated sugar and cinnamon; set aside.
 
In a saucepan, melt the butter and brown sugar over low heat, stirring well; set aside.
 
Cut the cream cheese into 20 equal cubes. Press the biscuits out with your fingers and sprinkle each with 1/2 teaspoon of cinnamon sugar. Place a cube of cream cheese in the center of each biscuit, wrapping and sealing the dough around the cream cheese.
 
Sprinkle 1/2 cup of the nuts into the bottom of the DO. Place half of the prepared biscuits in the DO. Sprinkle with cinnamon sugar, pour half of the melted butter mixture over the biscuits, and sprinkle on 1/2 cup of nuts.
 
Layer the remaining biscuits on top, sprinkle with the remaining cinnamon sugar, pour the remaining butter mixture over the biscuits, and sprinkle with the remaining 1/2 cup of nuts.
 
Using 8-10 charcoal briquettes on bottom and 14-16 briquettes on top, bake for 30 minutes or until rolls are cooked and browned. Remove from the oven and cool for 5 minutes.
 
Place a plate on top and invert. Make a pot of coffee and share with good friends.

That sounds yummy. I emailed it to Paula to see if she wants to do it on our Boy Scout leader training we're doing. Since she's cooking for 50 people in Dutch ovens, she may know more than me by the time the course is finished. I have been treated to some new meals that are yummy and the staff has been amazed at her meals. No surprise to me as she's an excellent cook.
 
She was making sugar cookies this morning and I'll have to snag the recipe. They're the best ever, at least according to the men in the family.

Sounds like an excellent recipe for the Meet In The Middle Rally!   I volunteer Marcy for the coffee ... I'll be the friend!   ;)

this weekend. They were pretty good. I used the store brand smaller biscuits. I think they would be better if you used the larger "Grands" type biscuits. I usually buy the Grands but thought they would be too big for this recipe. I was wrong.

Thanks Lori ~ for another great recipe. I also LOVE the chicken enchilada recipe. We are going to Calico this weekend and I think I might make those there.
