Crockpot Beef Stroganoff

I made this for Sunday lunch today and it was really good.  It tasted even BETTER for leftovers this evening. (see note after recipe)

Crockpot Beef Stroganoff
1 lb. beef for stew, cut into cubes
1 med. onion, chopped
2 cups mushrooms (I just used a Large can of mushrooms)
1 can (14 oz) beef broth
1 tub (8 oz) chive and onion cream cheese spread


Place meat, onion and mushrooms in crock pot.  Add beef broth.  Cover and cook on low for 6-8 hours OR high for 3-4 hours).  Add cream cheese spread just before serving; stir until well blended.  Serve tossed with hot cooked noodles.
(Make your crockpot preparation even faster - get ingredients ready the night before.  Place all ingredients EXCEPT cream cheese spread in crock pot.  Remove inner container and refrigerate until ready to cook the next day).


Like I said, this was very, very good.  But it only made 4 servings, so I went ahead and doubled this recipe.  The only problem that I found was that their was too much liguid and it didn't thicken up very well.  So, the next time I make this, I'm only going to use 1/2 can (or if you double the recipe.....1 can of beef broth).  Other than that....yum!  And it really was taster for leftovers.

I make something very similiar to this, almost all the same ingredients, except that at the end I stir in a carton of sour cream, instead of the cream cheese.   Oh, and I use the canned au jus instead of beef broth, it seems richer, or something.  Serve it over very hearty noodles, it's really good.   But, I'm going to try Sharon's recipe, and see which one my family likes best.
