ONIONS & HERB RICE MIX

I came across this recipe and thought it would be a nice side dish while camping.  I'm thinking that if you could substitute instant rice (you most probable have to adjust the water since instant rice is equal parts of rice and water, but with the soup mix, that may require some additional liquid.  
 
You also could substitute the onion soup mix for some other instant soup mix if you prefer.
 
 
ONIONS & HERB RICE MIX
 
4 cups uncooked rice
2 (1.3-ounce) packages onion soup mix
1/2 cup parsely flakes
2 tablespoons crushed basil leaves
 
Combine all ingredients in large bowl; mix well.  Place 1 1/4 cups rice mix in each of 4 air-tight containers or zip-top plastic bags.
 
Preparation instructions:
 
Combine 1 rice mix, 2 cups water and 1 tablespoon butter or margarine (optional) in 2 to 3 quart sauce pan.  Bring to boil; stir once or twice.  Reduce heat, cover and simmer 15 minutes (45 minutes for brown rice) or until rice is tender and liquid is absorbed.  Fluff with fork.

Sounds YUMMY!  My family likes rice.  My kids especially like flavored rice and this sounds like a really cheap alternative to the pre-made flavored rice.I'm going to try this at home this week (hopefully)!

Another route to bypass plain old white rice is to just substitute broth for water when cooking the rice. Since it comes in a medley of flavors, and in both low salt and fat free it can be a good substitute of those off the shelf products with a ton of sodium in them.
I also keep the spices handy when cooking rice. Just toss a teaspoon of your favorite dried herb or spice in when you start cooking.
