I have posted this info on another forum but am so pleased with the whole thing I thought I would also post it here in case anyone missed it.
We have a 2002 Coleman Cherokee with the swing arm galley.  That shelf behind the galley has always bugged me as a place that could be better utilized.  My pots and pans were also bugging me because I was always having to remove all them to get to the one I wanted.  Well, I managed to combine the two bugs.
I took three lengths of pvc furniture pipe, two "U" shaped connectors and two three hole connectors.  I cut the sides to fit from the swing arm galley shelf to just below the ceiling of the PU.  The third piece I cut wide enough so that the whole thing would fit between the dinette seats when traveling.  The three hole connectors fit on the bottom legs with the "U" connectors holding the top bar in place.  The whole thing slides behind the stove and sink without need for any other support (which wouldn't have fit anyway).  Using large "S" shaped plant hangers, I bent the top of the "S" to hang over the top of the rack and left the other end alone.  I hung my pots and pans on the hangers and I now have instant access.  Love it.  When we are packing up, I remove the pots and the hangers, slide the pot rack out and lay it between the dinette seats.  It's a beautiful thing.
Hope someone else can use this tip.

No pictures - sorry.  Someone on the open roads forum posted them on his website for me but I don't know what the link is.  Of course, I didn't save the pictures either.
