Country Breakfast Cobbler

We fixed this at our October rally and it disappeared quickly. Very easy to prepare and yummy. Since our son doesn't like cheese, we didn't add it per the note. I think I like it better this way. I also prepared a chocolate, chocolate, chocolate cake that our son said the frosting was to die for. It was gone in 5 minutes.

COUNTRY BREAKFAST COBBLER
 
Prep Time: 30 minutes (Ready in 1 hour 10 minutes)
 
FILLING
 

1 tablespoon oil
1 large onion, chopped
4 cups frozen hash-brown potatoes
3 cups chopped cooked ham
1/3 cup chopped fresh parsley
6 oz. (1 1/2 cups) shredded Cheddar cheese

 

TOPPING

 
1 1/2 cups Self-Rising Flour
1/2 teaspoon coarse ground black pepper
1 1/4 cups milk
1/2 cup butter or margarine, melted
5 eggs, beaten

 

1. Heat a greased Dutch oven to 400 degrees F (19 coals on top and 10 coals underneath). Heat oil in large skillet over medium-high heat until hot. Add onion; cook until tender, stirring occasionally. Add potatoes and ham; mix well. Remove from heat. Stir in parsley. Pour into greased baking dish. Sprinkle with cheese.

 
2. In medium bowl, combine all topping ingredients; beat with wire whisk until smooth. Pour batter over filling in baking dish.
 
3. Bake at 400 degrees F. for 35 to 40 minutes or until golden brown.

NOTE: We deleted the cheese and mixed in an undiluted can of cream of mushroom soup and thought it added to the recipe.

Sounds good, we will have to give it a try this season.

It does sound good.  Is it essential to transfer the dish from the DO to a greased baking pan for the final bake?  Seems like the Dutch Oven could be used for the whole thing.

DUH, I forgot to modify the directions. It was all done in the Dutch oven.
