need some ideas

We camp alot and we usually fall back on the usual camp meals. I need some ideas on things for meals that don't take a whole lot of work. But better than hotdogs. What do you eat while you camp?


Our usuals are : chili and DO cornbread, burgers, breakfast burritos ~ almost every breakfast.

I tend to keep the meals very simple when camping.  I work hard enough at home, don't want to do so much work when camping!!

I put meat (usually chicken or steaks) in a marinade in a zip-loc bag and freeze it.  Helps keep the other food in the cooler cold and as they thaw ~ meals in minutes!

I do a lot of vegies in foil packets ~ even though I'm usually the only one eating them!

I also brown and season meat ahead of time and put that in freezer bags too.  Then all we have to do is heat up the meat for tacos or sloppy joes.

Breakfasts are usually pancakes (I premeasure mix into freezer bags, so I don't have to measure at the cg) or plain ole cereal!

I love this website  for good camping food ideas.

My most favorite camping "food" is Mexican S'Mores ... you spread peanut butter on a tortilla, sprinkly mini marshmallows and mini chocolate chips over that.  Roll up the tortilla and wrap it in foil.  Put it near the fire (or on your grill) for about ten minutes) ... then enjoy the goo-ey mess!

Just read back ~ where would I be without freezer bags??!!  :J

I'm with Kelly.....Love those ziploc bags.
We usually splurge and get really good steaks when we are planning a campout. We also do HoBo pockets, BBQ ribs, CrockPot stews when we're camping in cold weather, and of course Hamburgers.
I like to keep it simple and do as much prep work at home as possible.
For breakfast we tend to keep it simple as neither DH or I are big morning meal eaters. When camping with a group we tend to have one morning when we cook up a huge smorgasborge(SP?) of a meal which tends to be more of a mid-morning brunch than a breakfast.
Lunches are usually sandwiches and/or fruit.
There are all kinds of recipes for some really good camp food on several different boards. Keep looking and I'm sure you'll get lots of ideas.

I make a fast & easy stew at home and freeze it in a Food Saver bag.  When ready to eat, I just boil it until heated.  Pretty fast & good.  I usually serve with garlic bread & salad.  Yummy

We usually have pancakes, bacon or sausage, and fruit for Saturday breakfast--Griffin would eat pancakes for every meal if I'd let him. At the last rally, I took my waffle iron and made waffles. At Malibu over Memorial Day weekend, I'm gong to try a cinnamon monkey bread recipe in my DO. I have also made some egg cassaroles in my DO for breakfast that were really yummy! I always get the already-cooked sausage and bacon that you just reheat in a skillet or toaster oven. It crisps up nicely and is very easy and fast. There is also less grease than with the uncooked kind.
 
Lunches are sandwiches--either regular sandwiches or hobo pie style. Jen, do you have a dutch oven? Dinner for us is something from our dutch ovens. It couldn't be easier to do and it always (well, always if Moose makes it; almost always, if I make it) tastes delicious. My favorites are beef stroganoff, chicken enchiladas, tamale pie, chicken pot pie, and any kind of dessert. ;) I'm going to be trying a new dish soon that is sort of Thanksgiving in a DO--turkey, mushrooms, cream of mushroom soup and stuffing on top. There are a number of DO recipes in the PUT recipe forum, as well as loads of them on the Internet. The recipe forum also has quite a few crockpot recipes. Of course, you would need hookups for those. :)

One of the best meals we had camping was when we bought red and green bell peppers and onions, (cut them up before we left), Then at the campground we stir fry boneless skinless chicken breasts, fajita seasoning, then mix in the veggies.  Take some flour tortilla's, salsa, sour cream and you have some pretty tasty Fajita's, and it's no a time consuming meal.

I agree with everyone else, make it simple.  Since we usually don't get to the campsite until 2-4 p.m. and it takes us a while to set up, I usually have something that just needs to be heated in the microwave.   We also have the usual, hot dogs, hamburgers, steak, sloppy joes, chicken, etc.  We are not big breakfast eaters, so I usually bake a couple of pounds of bacon before we leave.  (Place your bacon on a cookie sheet/jelly roll pan [one with sides to catch the grease], and bake it at 350 degrees for 20 - 30 minutes, depending on how crisp you want it.   Then wrap, enough for a meal, in a paper towel and place in a ziploc bag and refrigerate.  It's like the pre-cooked bacon, all you have to do is reheat it in the microwave.)  Then at the campground all I have to do is reheat the bacon and heat up some flour tortillas and my husband is in heaven.  Of course, you can do some scrambled eggs and add it to make a burrito, but he likes it with just the bacon.

Another is one my husband saw on the Food Network where you take an individual pizza crust (like Boboli), brush a little oil on the top and place it on your grill.  Toast it on that side, take it off and oil the other side (or the bottom).  Before you put it back on the grill, put your sauce and other toppings and cheese on it and put it back on the grill.  It is done when the cheese melts.  You have to watch it carefully because the bottom could burn.  Sometimes we have to put foil over the top to get the cheese to melt.  They are sooooo gooood!!!  I bet the kids would love helping with this.  Last year Costco had a package that had 6 or 8 individual Boboli crusts and sauces in a box (located by the bread) so it made it real easy to carry in the hybred because it was all together.

I LOVE to cook! It relaxes me! For breakfast I'll make Eggs Benedict, (I do cheat on the Hollandaise sauce and make it from a package), sometimes I'll do Peach or blueberry pancakes (not as often now that I'm doing South Beach), French Toast (wife's fav), Asparagus, Mushroom, and Cheese Omelets, or simply Bacon and eggs.

Lunch is usually Tuna, PB&J or something simple.

Dinner is usually an experiment, either with BBQ, the DO, or over open flame!

 Before you leave par boil ribs in Root Beer till tender...pack away for the ride...once there, grill over an open fire till warm with your favorite BBQ sauce......one word....................YUMMMMMMMMMMM

Campaholics

Since you have a Dutch Oven, just about any casarole you do at home, will work.  Also consider chow mein; use any meat, and any combination of veggies, serve over Minute Rice.  Salisbury steak with onion and mushroom gravy and noodles.   These are all straightfoward, and don't take a lot of time.

If you have an electric site, bring a slow cooker and make pot roast.

A breakfast variation, cut the bottom out of a small pineapple can to use as a form, and make egg McMuffins.  

For a non cooking breakfast, mix a couple of table spoons of Grape Nuts into a carton of yogurt along with some fruit.  Won't win any appeance contests, but tastes good.
