RVque Cake

I tried an experiment while camping over Labor day and it worked!

I mixed up a regular Jiffy one-layer yellow cake mix by hand and put the batter in a oil-sprayed disposable foil 8" square pan.  I preheated my RVque, and then set it about half-way between low and medium.  I had to carefully remove the top heating rack and set it aside so the pan will fit inside. (Next time I will remove it before pre-heating!)  Baking time for the cake was just as indicated on the package...20 minutes, but I started checking with a toothpick after about 15 minutes.

It was about 92 degrees out, so I am sure that the setting on the RVque temperature and baking time would have to be adjusted for wind, ambient temperature, and altitude.

The aroma of the fresh baking cake was great, and not something that is a usual smell wafting across the campground. The cake turned out great without any burning. When iced with premixed cake icing, it was a awesome change from s'mores. Now I am beginning to think about cinamon rolls, pineapple upside-down cake, homemade biscuits...
