Southern Sausage Johnnycake

1 lb loose sausage
2 sm. apples
cinnamon and brown sugar to taste
2 pkg Washington Cornbread Mix

Brown sausage in a skillet. Mince apples, mix in about 2tbsp. brown sugar and 1/8 tsp cinnamon. Add to sausage, cook 5 min, drain and set aside. Grease  9 x 14 baking pan. Prepare 2 pkg cornbread mix as per instructions on pkg, adding brown sugar/cinnamon to taste. mix in  sausage and apples. Add to pan, bake as per package instructions.  Serve with Maple syrup. Serves 6.

if you live on the east coast. particularly the mid Atlantic, then you should be able to find Washington baking products and mixes; //www.wrmills.com. These are very convenient, especially the cake and muffin mixes as they are packaged for a single batch. six muffins, one cake, etc. This recipe calls for two packages of the Washington Cornbread mix: if you can't find it, than one standard package of commercial cornbread mix should do. i haven't tried it in my Coleman oven yet, but it can be cut in half for a single 9x11 pan (I have my coleman oven set up with an extra rack to take two 9x11 pans). I imagine raisins or mincement could be added or substituted for the apple, but the apple tasted good.

This is called southern johnnycake to reflect the north/south influences. Jhonnycake is traditional New England cornbread, usually done in a spoonbread style, served with maple syrup for dippin'. Enjoy.

I made this for a potluck breakfast with the SSCampers this last weekend everyone commented how good this was and it was soooo simple...I used jiffy corn bread mix 2 boxes and baked it in a cast iron skillet and served suryp with it.
