 Hi All,
 
 One of our required breakfasts while we re camping is pancakes. They have a tendancy to get cold real quick when you re cooking a group. Here s a a little fix that we ve found that helps keep them warm.
 
 We heat the syrup and butter in a sauce pan almost to boiling. Pouring the warm syrup mixtue over them help everyone have a warm breakfast of pancakes.

 BearnkatWe have a Coleman Grillin  griddle that is just high enough off the table to fit one of our enamel plates under. I usually put the plate under half way through the first batch of pancakes, so it warms up. As the pancakes cook and I put batches on the plate, I cover it with foil to keep them warm.
 
 We never serve pancakes, while at home or camping, without warmed syrup! [:D]

 BearnkatWhen cooking pancakes at high altitude, pancakes can come out kind of flat.  Instead of making them with milk, use powdered milk and 7-up.
 
 We learned this trick from the cook at a ride-in breakfast.  They had been making pancakes that way since the 1940 s.
 
 We were in Grand Teton NP.  We rode on horseback to a stand that has been there for half a century.  We were able to eat all we wanted of eggs, bacon, sausage, pancakes, OJ, etc.  With 12,000 ft + Mount Moran and the rest of the Tetons spread out in front of us, it was a simple but delicious breakfast that will be remembered forever.  When we were done, we got another horseback ride back to the stables.

 BearnkatJust a quick pancake hint that probably everyone already uses:  I put the dry pancake mix into a water bottle (the kind with a cap that has a hole in it).  All I have to do when we want pancakes is add the water, shake it up real well and pour the batter out of the hole.  I have to admit, I usually don t wash the thing out until I get home to a dishwasher.  Just throw it into the cooler to keep it from spoiling until I get back.

 BearnkatThanks for the hints, do you make regular pancakes?  My friend, Brborn, gave me a little recipe that we use sometimes.  I do not know the exact measurements but we take the powder mix and instead of adding just water we add vanilla, cinnamon and heavy cream (don t use if on a diet).  Brborn, anything to add?

 BearnkatI will hold no shame here and claim that I am the Pancake King.   Just ask my kids or any of their friends.  We have been using Aunt Jemima s pancake mix for years and years.  We follow the recipe except that we add vanilla extract.  We warm the syrup too.  Sometimes the kids like to add food coloring.  On St. Patties Day we go with green.  Christmas season we use green and red.  Valentines we use red.  Sometimes the kids like to use the blue.  When I make pancakes I always make shaped pancakes.  No, I don t use those cookie cutter like forms, I do mine freehanded using a small spoon.  For instance, at Christmas time I will drop several dots of red dyed pancake batter and then cover it with green pancake batter for Christmas trees.   I do the same with Christmas wreaths.  We also make shaped Butterflies that really turn out pretty good.

 BearnkatWell I reckon I cheat. I buy the Bisquick brand pancake mix in the little yellow containers. Smack em on the counter to break up the dry ingredients, add 8 ounces of water, shake to mix, pour from bottle to griddle, eat em one at a time while their still hot w/warmed syrup natch (syrup heated in microwave in bottle), toss bottle in garbage when finished, wipe griddle with paper towel, throw paper plates/plastic silverware in garbage and clean-up complete. The addition of Hormel already cooked bacon (nuke for 15 seconds on paper towel for 4 slices) and Blueberry brand Bisquick mix has been the staple Saturday morning breakfast for Frances and I this past camping season...earl

 BearnkatYou guys sure know how to live good!  Just reading this thread has filled me with great pancake ideas and a BIG APPETITE for PANCAKES.  Sometimes in winter my Mom used to fix pancakes for supper along with  lots of nice, crisp bacon.  WE LOVED THEM like that--what great comfort food.  And now and then she fixed real fried potatoes (plump little slices that got all golden-brown and crispy on the edges) and then on the side, fried eggs with a soft yoke.  My father used to have his eggs over his potatoes and SMILE!  If you have never tried this, it is surprisingly good and satisfying on a cold snowy night and it makes the kitchen smell SO GOOD!.  (NOT low in Calories, alas[&:])

 BearnkatDon t forget to throw in a couple handfulls of blueberries or chocolate chips in that pancake batter. Another quick tip from us lazy weekend cooks. Pre make pancakes or waffles and all you have to do is stick em in the toaster or wrap in foil and place on the grill or in an oven. My kids will not eat cereal and lots of days I am not so energetic in the morning, so I premake them a box at a time and freeze em up. They will stay frozen in the extreme cooler for a couple of days and are still good as long as they are kept cool for a couple more. You can also do the same thing with french toast or waffles. (the frozen ones are expensive so you can save some $$$$ too)

 BearnkatI like the Krustez brand mix.  If you measure the mix ahead of time and put it in plastic zipper bags all you have to do is add water and squeeze the bag.  Just throw the bag away when you are done.  You don t have to wash the container.

 BearnkatKrusteze is just great.   I use the containers that nondairy powdered creamer comes in, they hold quite a bit of mix, and have a flip open hole at the top for pouring.  Another thing they come in handy for is eggs.  Depending on the size bottle, you can crack open a dozen or more eggs, carefully put them into the container and when you want eggs they pour out one at a time into your pan.  Unless you deliberately shake them up, no more problems about carrying eggs without breaking them.   (I also cook ahead and freeze french toast and waffles and use the toaster to heat them.)

 BearnkatI have to agree...Krusteaz brand are the best (my dh s secret recipe, don t tell my mom).  We make them with mini chocolate chips and the kids love them too.  Gotta have Log Cabin syruptoo...mmmm, I m hungry (oh wait, I m low carbing it...oh well).
