 Hi everybody[:D],
 
 As you will see...there can be many different ways to cook and serve.  It s easy to accommodate your family s tastes with this dish.
 
 Ingredients:  
 2 cups coursely chopped onions
 Enough cooking oil in pot to saute onions (I use Olive oil)
 (ALL cans are 14 to 16 oz in size)
 1-can Red/pink beans
 1-can White beans
 2-cans Black beans
 2-cans peeled, diced tomatoes w/roasted garlic & onion
 1-1 lb pkg Lil  red smokies (mini cocktail sausages or your favorite sausage) (meat is optional)
 1-can corn (optional & not creamed)
 Spices: use what you like, we use some of these: minced garlic chips, oregano, cumin, chili powder, black or cayenne pepper, sea salt , etc.  I always season to taste and don t measure![:o][&:][;)]
 
 Directions:
 Use enough oil in pan to saute the 2 cups of onions.  Drain/rinse the liquid from the red and white beans (corn...just drain).  Retain/use the liquid of the black beans and tomatoes.  Add all ingredients to pot, spice and stir...simmer & stir ocassionally for about 20 minutes.
 
 For hot side dish or chilled dip...leave out the meat.  For a meal...you can serve with the meat...and/or with rice or pasta.  For a " healthly version"  I use smoked turkey sausage cut into chunks...if I m running late, in a hurry or just plain lazy...I use the mini sausages.  For a spicier version, substitute just one can of the " roasted garlic & onion"  tomatoes with one can of  the " green chillies"  version of tomatoes.
