 A while ago the subject of potato-cakes came up. These are a variation of the pancake theme, using left-over mashed potatoes as the main ingredient. Basically, you take about 4 cups of mashed potatoes, add a couple eggs, about 3 tbls. of cooking oil, 1 tbls. of sugar, around a cup of flour, and mix with enough milk to get a proper " spoonable"  pancake batter. The ingredients are not set in stone, as different people make different tasting mashed potatoes, and there s plenty of room for experimentation (garlic or onion powder, pepper, etc.) The end result is a breakfast dish that tastes great with syrup and sausage (delete the sugar from the recipe if using syrup), but our family LOVES them with left-over turkey gravy. The dish is even better if the gravy has lots of turkey-meat chunks in it. It s our traditional  " Morning After Thanksgiving"  breakfast.
 
 Problem is, making potato-cakes from scratch takes a lot of time, or you need to have left-over spuds on hand. I like to try new things in the kitchen, especially if they may work good for camping. This morning I tried something to speed things up a bit, and it was a big hit with the kids. So here s a brand new recipe for " Instant"  Potato-Cakes:
 
 1 cup Betty Crocker " Potato Buds"  mashed Potatoes.
 1 cup water (substitute milk for a richer flavor).
 Mix in a bowl and set aside for 3-4 minutes while you get the pan warmed up.
 
 Add a large egg after mix has thickened up a bit.
 2 tbls. cooking oil.
 Add 1/2 cup Krusteaz Buttermilk Pancake mix.  
 Add enough milk for a proper spoonable pancake mix.
 
 Makes about 10-12 four inch potato-cakes, or 4 large " plate-size"  cakes.

 Ab DiverDave, yum is all I can say!!  I m always making mashed potatoes and always make way too much of them!!!!!!!!!!!!!  This recipe is a definite, can t wait to make them.

 Ab Divermy great aunt used to make these for me, only she dipped them in beaten egg and fine cracker crumbs too. mmmmmmmm

 Ab DiverBW and I have found that if you make a lot of mashed potatoes for dinner and then make the leftovers in pancakes they are great. The apple butter makes them even better. Nothing like real potatoes. For that matter nothing like the real everything.[:)]
