 I tried this the other night and they ended up very well.  Depending on how many people you want to feed.....depends mainly on the flour mixture and eggs.  This is what I use for about 20 or so wings.  (btw.....i never measure)
 
 I use canola oil in a large pot.  (big = makes sure it doesn t overflow and cause fires).  Only go about 1/2 way with the oil, compared with the top of the pot.  Put it on med/hot.  As the oil is heating up..............
 
 I usually use frozen chicken wings and try to get the bigger ones.  I let them defrost for alittle.  (make sure no ice is still on them.....cause it ll splatter more).  I put alittle soy sauce of the wings first....then add pepper, crushed red pepper and garlic.  Then flip the wings over and coat the other side.  
 
 Next get 3 eggs....and stir them up.  I use a shallow bowl to put them in after they re stirred.  Get another shallow bowl and put all purpose flour in it.  I load it up with black pepper, garlic powder, and crushed red peppers.  Stir the flour mixture up.  
 
 The sauce mixture.......I use a jar of Texas Pete Hot Wing sauce and mix a 6oz bottle of Crystal hot sauce in it.  Put it on the oven.....low heat.  Stir everyonce in awhile.  (Depending where you re at and how hot you want the wings.......up to you on the hot sauce)
 
 Now you re ready for the messy part.  Oil is hot......hot wing sauce is warming up.  First dip the wings in the egg mixture (use one hand on this.......trust me).  Next roll the chicken wing in the flour mixture and coat it up well.  I usually just stack the wings on a seperate plate, then toss them in the oil.  Once in the oil, stir everyonce in a while to ensure complete cooking.  I usually know the wings are done when they start to float abit.  And make sure they re a golden brown.  
 
 Find a tight sealing tupperware type product and put the heated hot sauce mixture in it.  Once the wings are done, put them on something to let the oil drain off.   Then toss them in the hot sauce, seal the lid and shake the crap outta them!.  
 
 Put on a plate/platter........and they re ready.  I use Blue Cheese dressing to dip them in.
