this is my favourite. I use beef but you could just as easily use a pork roast instead.

angelsmom10We ve been low carb for a while so finding a BBQ recipe was high on my list of things to do.  I think I found a great one!  I make the sauce before the trip and cook the short ribs in the Dutch oven at the site.  All you have to do is replenish the water as needed until tender.  Reduce the water to almost nothing, pull out the obvious fat and bones and sort of unceremoniously mash up the very tender meat.  Then just dump the sauce on top.  I let it heat through, adding a bit of water if it is too thick or if unexpected company has followed their nose to the fire.  It is served in bowls.  You can do buns/bread if you are in to them.

This recipe has no sugar in it, just sugar substitutes.
 1 stick butter
 1/4 c vinegar
 1 c tomato sauce
 2 Tbs Worcestershire sauce
 1/2 Tbs Tabasco sauce
 1 Tbs prepared yellow mustard
 1 dash cayenne pepper
 2 tsp lemon juice
2 tsp (little pink ones that come with the box) Sweet n  Low Brown
 2 packets Splenda
 opt:
 1 tsp liquid smoke flavoring

Melt butter, add vinegar and other ingredients.  Stir until well blended (you have to chase down the mustard to do this).  Bring to a boil, then lower heat and simmer for a few minutes.

Carbs/serving (1 Tbs):  less than one gram.

Using the two sweeteners together has a synergistic effect of providing a sweeter taste than one type used alone.  Don t know the chemistry, but that s the way it is.
You can add more of each Sweet N  Low and Splenda to taste.

Same goes for the hot stuff.  I tend to have a heavy hand and we re all sniffing by the second bite, but I ve given the milder version here.

This pulled pork bbq is a favorite both at home and when camping.
To make it totally stressless for camping, cook it all before you leave and just heat it up when the crowd is hungry!
