Chicken Wild Rice Casserole

Chicken Wild Rice Casserole
 
4 chicken breasts (cooked, deboned and cube the meat)
2 boxes  cooked uncle ben's wild and long grain rice, original recipe
2 cans cream of mushroom soup
1 soup can milk
1/2 cup chopped green pepper, optional
Salt & Pepper to taste
 
Mix all ingredients together. Bake in a buttered 13x9 casserole uncovered at 350 for 35-50 minutes until slightly browned on top.  Serves 10-12.  Recipe can be doubled for serving at parties or family gatherings.  It makes a wonderful dish for the holidays.  Turkey can be substituted for chicken.

OK! Very nice dish. Made it last night as I said I would. Only one question, I was not sure about cooking the rice first and then putting into the casserole or just put it in the casserole without cooking it first. The last idea is what I done??? :confused:

You have to cook that rice before you mix the ingredients together to bake...or you will be baking for a long, long time and having to add more water. Recipe says 2 boxes cooked uncle ben's wild and long grain rice, original recipe. That means cooked just like it says on the box.

Well, now i KNOW WHY iT TOOK SO LONG TO COOK. iT WAS VERY GOOD ANYHOW..

Don't worry, there are others who have done it like that and called me to ask about whether to cook the rice.  You will porbably add this to your favorite recipes next time you make it.  I have used this for large parties and made in the 4 or 6 quart rectangular baking dishes.  It always goes over big with something like fresh green beans or asparagus or broccoli casserole on the side, some cranberry sauce or cranberry salad.  You can even cut back on the chicken a bit and serve baked ham as the meat entree along with the casserole.  I've done so much entertaining and I am always looking for easy things to make in large quantities. You can make the Chicken-Rice Casserole the day before and reheat on serving day....just add a little milk or water on top of the casserole to keep it from drying out during the reheating process.  It's also a good way to get rid of left over turkey which I sometimes freeze and then make the casserole a few weeks later.

I have never tried mixing ham and chicken in the wild rice casserole or any other casserole. I just served it along side the chicken wild rice casserole.  Those who don't care for ham could just eat the chicken casserole, those who did eat ham could also eat the casserole.  I supposed you might be onto something to create a ham-chicken casserole.:)
