 I know "s'mores" are out, does anyone have any good diabetes type camping recipes?:U

Hi Stan,
I've been on South Beach Diet since last June when my 3rd blood test in a row came back with borderline high sugar, high triglycerides, high cholesterol, etc. I was also 60 to 70 lbs overweight. All blood levels are back down in the normal range now and I'm 35 lbs lighter. I asked for any low carb, low fat recipes last summer but got no response, so I am adapting some as I go.

I have a chicken stew that uses a few carrots, celery, Cauliflower in place of potatoes, that I do in the Dutch Oven or just in a pot on the stove that I will post if you're interested. If you prefer I can email them to you rather than posting.

Guess we have the same symptoms plus I also picked up high blood pressure. I have dropped 25lbs and triglycerides have gone from 439 to 87 following the Atkins diet. Still have 25lbs to go.
 Doc said I was clinically a Type 2 diabetic but he hasn't prescribed anything except for BP medication due to the progress I have made with the diet and increase in exercise.
     
     I have found the Carbsense line of products to be pretty good.

 We have had a few of the things, just this AM we had pancakes and syrup with a total of 1G of carb per pancake including the syrup.

 Walmart had a sale recently and everything they had was $1 per box. We bought about 20 boxes and should have bought more.We bought the MiniCarb items.

I too, am doing Atkins. Diabetes runs in the family and I was overweight, have lost almost 60lbs since May and feel great, my chloesterol was good too! There are a lot of recipes on the different web sites that support low carb lifestyles, e-mail if you want some of them.  A lot of the recipes are very good and I didn't have problems using them while camping.  I didn't really miss the smore's but had my share of cleaning up after them!  :)

Yes I am a diabetic but sorryI do not have any recipes.I am planning to go camping in May but first I have to fix my pop-up since I just reciently acquired it today. Just started to look for parts and literature.

I have been on South Beach just over one year and have lost 100 pounds.  My wife has lost 37 pounds.  Here are a couple of semi low carb recipies we use from time to time:
 
BLACK BEAN SALSA CHICKEN
 
2- boneless skinless chicken breasts
1- can black beans
3/4- jar salsa
1/2 -tsp chili powder
 
Put the beans on the bottom of a 9x9 baking dish
put the chicken on top of the beans
Sprinkle the chili powder on the chicken then
pour salsa onto the chicken.  
 
Bake at 350 degrees for about 35  minutes or until chicken is done.  You can put a couple of slices of low fat pepper jack on top when it is done or about done.
 
This can be prepared in a small dutch oven or a crock pot.  
 
We have learned that if you put frozen chicken in the crock pot about 7:00AM, it will be done but not too mushy by about 5:30PM.  
 
The black beans have some carbs but they also have quite a bit of fiber and protien.
 
Another variation is to put chicken in the bottom of the baking dish and cover it with low fat pasta sauce.  Cook it at 350 for 35 minutes or until the chicken is done put on a slice of low fat provalone cheese and allow it to melt.
 
LOWER CARB STEW
 
12- ounces lean steak
1- can green beans
1- can white beans
1- can petite diced tomatos
1- can green peas
(Other canned veggies can be used.  Steer away from potatos and carrots for the carb and/or sugar content.  Also frozen veggies can be used if you wish but that is difficult when you are camping.)
2- tablespoons worchestershire sauce
1- teaspoon celery seed
1- medium white onion diced
Dash of garlic powder or garlic juice
Dash of white pepper or fresh ground pepper
 
While you are browning the steak, dump all the other ingredients in a crock pot, stew pot or dutch oven.  Add the steak and cook until the meat gets tender.  
The Worchestershire Sauce really sets off the stew and is one of the few steak seasonings that is allowable on South Beach.  
 
We have a crock pot in our camper so we put this in in the morning and go about our business this is really good by about 5PM.  
 
We also stir-fry frozen green peas with onion and garlic in olive oil then sprinkle on a little soy sauce right at the end.  This can also be done with green beans.
 
Frozen okra is also good cooked in diced tomatos or you can get a Trappey's brand already canned with tomatos.
 
I realize the tomatoes have some natural sugar so do the onions but these are things to eat that are lower in fat and carbs.
 
TURKEY CHILI
Use ground turkey in place of ground beef for a lower fat chili.  We use Carrol Shelby's mix and throw out the corn mesa flour to reduce carbs.  We also add either one can of chili beans, pinto beans or kidney beans then use a hand blender to puree all of it.  It makes thicker chili and the kids like it better on hot dogs.

I've been in the middle of year end audits with the accountants at my main job, our church's fiscal year is ending soon (I'm treasurer) and our local golf course (I'm Clerk, Secretary-Treasurer) is starting to wind up with membership drive, etc. SOOOO, I've been too busy to post, but I promise to share!

when i pot my meats or chicken I use one *college inn broth, and one can of water. 1 gram fat, no saturated fat, no cholesterol, no carbs, no sugar. but does have sodium! 900mgs. i also so use garlic, pepper,
 we like steaming the vegs in with the meat. or slices of meat on top of a wild green salad
 
 sodium for me is no problem i'm one of those you hate, a bp of 90/60,

Okay, FINALLY, here's one I make:

Hearty Chicken Stew
(4 Servings more or less)

4 Boneless chicken Breast halves
1 big can 99% Fat Free Chicken Broth
1 small onion, coarsely chopped
2 or 3 stalks of Celery, sliced
(I use more celery and less Carrots to cut carbs)
2 or 3 Carrots, sliced (I sometimes omit and add more Celery and other stuff)
1 can of Mushroom pieces or 8 ozs fresh mushrooms sliced
1/2 head of Cauliflower, broken into small florets
1 cup of Milk, 1/2 & 1/2, or light or heavy cream (I've used all and it's still good!)
Salt & Pepper to taste
1/2 stick of Butter (optional)

Place Chicken and Broth in a pot and simmer until chicken is done. Take chicken out. Add onion, celery, Carrots, mushrooms to broth, and simmer about 15 to 20 minutes, add cauliflower florets and continue cooking until Cauliflower is done to your liking, (I cook it about 20 minutes). While the veggies are cooking, cut up chicken into bite sized pieces. When veggies are done, add the chicken back along with the milk, salt & Peper. Heat until piping hot, but do not boil after adding the milk! If using the butter, add and let melt just before serving.
Laddle into bowls and enjoy. At home, I'll sometimes serve it with Low Carb Bread fresh from the bread machine!

I have not yet tried this in my dutch oven, but will VERY soon.
This was adapted from a recipe that used potatoes instead of Cauliflower. I always liked it, but once I went on South Beach, the cauliflower replaced the potato and I still like it!
