Breakfast Sausage Potatoes

Hi Everyone,
 
On our last camping trip, some of our fellow campers loved this recipe and asked for it.  Sorry I'm so late!  :yikes:
 
This is a recipe for awesome sausage potatoes.  I usually serve them for breakfast.  I make them ahead of time and heat them right before serving.  Here goes:
 
Ingredients:  8 potatoes (8 oz. each),
2 Tblsp. olive oil
1lb. Bulk Hot Italian Sausage
1 C. Chopped Green Onion
4 Tblsp. Cilantro (Fresh)
1/2 C. Sour Cream (Or to taste)
Salt, White pepper, garlic powder
 
Prick Potatoes, scrub and pat dry.  Bake for 1 and 1/4 hours or until tender.  
MEANWHILE: heat the oil in skillet.  Add sausage meat and cook over med. heat until sausage is browned, breaking the meat apart as it cooks.  Using a slotted spoon, transfer the cooked sausage to a mixing bowl.  Return pan and sausage grease (I know, I know) to the heat.  
 
Add chopped onion to grease in pan and saute over med. heat until it is wilted and lightly colored, about 5 minutes.  Add the sauted onion to sausage in mixing bowl.  Add the colantro to the mixture in the bowl, mix thoroughly.  Set Aside
 
Remove potatoes from the oven, but leave oven on.  When potatoes are cool enough to handle, make a slit on top, push on ends of the potatoe to open it up.  Carefully scoop out the pulp, placing it in the mixing bowl.  Potato skin should be left whole to form a "boat".  Set the "boats" aside.
 
Mash potatoes with sour cream and seasonings.  Gently add the sausage/onion/cilantro mixture.  Stuff the "boats" with mixture, mounding it slightly.  Place the stuffed potatoes on a baking sheet, return them to the oven and heat through, approximately 15 minutes.
 
IF MADE AHEAD OF TIME:  Wrap stuffed potatoes in foil and refrigerate until ready to heat and serve. To heat, bake 400 degrees for about 30 minutes.
 
 
I haven't met anyone yet who hasn't loved these.  It's my mother-in-law's recipe.

Wow!  That sounds good!  I don't know how many people have an oven available camping but there's always the old fashioned campfire coals or just for home cookin too.  I made a copy, and yes I'm male but I'm also a better cook than DW, She'll even admit it.  Thanks Estelle.

You are so welcome!  Let me know if you make them and how they come out.
 
Also, I'll make them here (like you stated) and the kiddos will eat them for breakfast.  Not just for camping! :p

We are going tent camping next month with the grandkids for the last time before we get our PUP and I've put them on the menu for breakfast.  I'm going to make them ahead of time and throw them in campfire coals to reheat in the AM.
