Need Recipe for leftover ham

I made a huge ham Sunday for dinner and I've got alot leftover.....I need recipes with leftover ham in it!!!

My mother used to make Scalloped Potatoes and Ham.  Just use your traditional Scalloped Potatoes recipe and layer the ham slices between the potatoes before you put the sauce over it.   YUM

Ham freezes well, so you can put it in the freezer and pull it out for weekend breakfasts with eggs or diced up in an omlet.

We use leftover ham and make a white bean soup and have cornbread with it.

Just saw this recipe and thought it fit the bill.

SOUTHERN  HAM  CHOWDER

2 or 3   sliced yellow summer squash or zucchini
1/2 Lg. red or green bell pepper chopped
about 1/2 teas. dried thyme
1-2 TB margarine or butter
2 cans chicken broth
1LG potato chopped
black pepper to taste
about 1/2lb cooked ham chopped kind of small
1 can cream corn
5-6 green onions chopped
3/4-1C  half and half

Cook the squash, sweet pepper and thyme in hot buter/margarine over med heat about 3-5 minutes till squash is tender. Stir in broth, potato and black pepper.
Bring to boil;  reduce heat. Cover and simmer for about 15 minutes. Or until potato is tender. Mush mixture up some with old fashioned potato masher. Add can corn, ham, green onion and half and half. Heat through. Serve in Large bowls. Is very good for served with a good loaf of home made bread.

My DW loves ham steak, but we always have some leftover, so it is pretty common for us to just plan on making fried rice with diced ham, eggs, peas, carrots, and some soy sauce the next night.

Leftover Ham on a camping trip?  Make McMuffins for breakfast.
