i put an steel platform on our niagra's rear bumper for my 11 gal tote or the wood box or what ever but you do need to reinforce the bumper, i found out mine is held on by 3/8 or 1/2 inch aluminum rivets and there are three on each frame rail, putting the wood box on the rack loosened the rivets a little bit so I'm gonna get the bumper welded all around the frame rail that should take care of the problem.

We camp about 7 days at a time and with a family of 5 we  seem to use about 10-15 gallons of water a day. Washing dishes 3 times a day and cleaning hands.  I had (2) 5 gallon jugs but they were always over-flowing.

Whoa, you go through a lot of water.  My family of 4 mostly  do weekends and we usually don't completely fill a 7 gallon Aquatainer over the weekend.

Since you use a lot of water, a Barker roll around tote would probably be your best bet.

Most three day weekends I will fill the 7 gal jug with the outside sink doeing dishes. The jug for the inside sink is just used for personal washing. When we are traveling, we don't set up the outside sink. I think that 2 1/2 gal would work for us on a overnite stop, might work all the time for the inside sink and would be easier with the low drain on the Starcraft.
