Pie Iron Apple Pies

These are so scrumptious!

At home (before you go camping), follow any recipe to make pie filling (don't used the canned stuff, it's not as good).  I always use the apple pie recipe from the Betty Crocker cookbook.  Instead of baking the filling in a pie crust, pour the filling into a casserole dish and bake it (at whatever temp the recipe says) until the fruit is tender.

Once cooled, pack it up in a large Rubbermaid-type container and bring it in  your cooler on the camping trip.  Okay, here's the recipe:

PIE IRON PIES

1 box of refrigerated Pillsbury ready-made pie crust (the stuff that comes in sheets)

butter

Pie filling that you pre-made  (apple, peach, etc.)

You'll need pie irons (the ones I use look like this:  http://www.roundthecampfire.com/detail.aspx?ID=1

Open the pie iron and rub the entire inside with butter.

Take a sheet of the pie crust and cut 2 squares out that will fit the 2 inside sections of the pie iron.  Press them into the pie iron so that the crust comes up onto the lip of each side.   You can "patchwork" the crust...if you find you are a little short in an area, just cut a piece off the bigger sheet and press it in.  You can also use scraps of crust to make another pie by patchworking (keeps you from wasting crust!)

Fill one side of the pie iron generously with the fruit filling and close the pie iron.

Cook over the flame on both sides, cooking until nicely golden brown (you'll need to open the pie irons periodically to check for brownness).  When they are nice and golden, open the pie iron and they will fall right out.

These are soooooooo delicious, they are worth the effort of making the homemade pie filling at home.

Buttered bread, puff pastry and crescent rolls work well also. I like to make sandwiches in our pie irons especially a ruben. MMmmmmm now I'm hungry.Moose

suggestion: Do NOT use the thin pastry sheets for this! They did not work, are expensive, and made a huge mess  :(  I have found that crescent rolls work the best, just leave them in squares and flatten out a little to get rid of the perforation for the triangle.

I have always used the buttered bread and canned filling.  Nice and easy that way.  
 
Has anyone ever done pizza's in it?  Someone once told me they have but I was wondering how to do it the best.

We did a "pizza" in pie irons a while ago.  Bread, pizza sauce, cheese, pepperoni.  Prepare bread in normal manner put sauce, cheese and whatever fillings you want inside.  Bake in coals for a couple minutes per side.
 
Turned out pretty well, although I prefer our local Brick Oven Pizza better.

We'll have to try that.  It sounds delicious.  

We have a couple of old pie irons my grandparents used.  We just take two slices of white bread, pull the crust off and save it.  Put one slice in the iron, spoon regular preserves on it, put the othe slice on top and close.  It crimps and seals the bread in one shot.  Hold over the campfire until it turns lite golden brown.  Take the pieces of crust and crumble them up about  50 feet from your site and watch the birds go after it . It's been a family camping tradition for 3 generations...Using the same pie irons in fact.
