Campfire cooking

After growing up camping and having just purchased my first camper of my own for my own young family, one thing I most look forward to is campfire cooking.  Everybody knows marshmellos and smores.  To me, no hot dog tastes better than one cooked on a stick over a campfire.  I can't explain it.  They are juicier and tastier than cooking them over a grill.  

Another favorite of mine growing up that I can't wait to do is pie iron cooking.  When I was little we'd fill up at dinner with pizza pie irons.  Just butter up two pieces of bread, add sauce, cheese and pepporoni and cook them over the fire.  It was hot pockets before hot pockets were invented.  

For dessert, we'd throw in a couple more slices of bread with fruit filling.   I loved this stuff.

One more that I recall was making hot pretzels.  We'd take popin fresh dough from the can, roll them out and twist them around a fork.  We'd cook them over the fire until the outside had turned a crispy brown. Then use butter spray and a little salt and we had fresh hot pretzels.  

I'd love to hear any other ideas for fun things to cook over a campfire.  It's a great way to make dinner or snack time fun for the kids.

Try making apple pies in the pie irons. Cut up fresh apples and cook them with butter, brown suagr and cinnamon. For a neat twist add some cheddar cheese they are out of this world. :-()  We also make breakfast sandwiches in the pie irons. We love doing stews, chili andcampfire beans in the dutch ovens. Writing this make me hungry for spring and camping!

If you like campfire cooking, you might like the Campfire Cafe website.  They used to have a free broadcast TV cooking show, but now they are trying a for-profit on demand cooking training business model.  However, they produce a very nice "Coffee Table" type hardcover cookbook with tons of campfire cooking ideas and recipes.  Also, a few times a year their online store has good sales.
