Yes, I admit it. I m an eater not a cooker.

Last night, we had Popeye s chicken with some side dishes. The gravy was really good, so I did a search on Google and found recipes for making it. Now, although this one didn t taste like Popeye s, it was really thick, tasty and only took a few minutes to manufacture. We put a can of small red beans in it (at the time of adding remaining ingredients) and served it over rice. Excellent! Total cost of $0.60 including the can of broth (under $2 with the beans & rice).

Don t ask me for the e=mc2 of how it becomes gravy, but it really works.

TC s Gravy from almost nothing

 4-1/2 tablespoons vegetable oil
 4-1/2 tablespoons all purpose flour
 1-2 dashes white pepper
 1-2 dashes cayenne pepper
 1/8 teaspoon paprika
 1/4 teaspoon salt
1-soup sized can of chicken broth

Cook the oil and flour for 10 to 15 minutes, over low heat, making sure the mixture browns but does not burn.

Add remaining ingredients and bring to a boil. Cook for 10 minutes or until the mixture reaches desired thickness.

topcat7736Almost nothing?!   Pointy, there s 7 ingredients listed there.  Almost nothing means more like 1 or 2, maybe.   Flour and water.   Or something along those lines.  All that snow and cold is numbing your brain little bro, or else you haven t had breakfast yet and are dreaming about biscuits and gravy!   So, anyone want to give TC their favorite biscuits and gravy recipe?

Toni, the problem is, he cant count.[;)]  (Or else he is stoned on the contents of that  Dinty Moore stuff he is always eating.[&:])

I d give my biscuits and gravy recipe  but even the act of just writing it out would make me gain weight![:@]

CAMPNMOM

topcat7736There s a recipe for bisquits and gravy??  I just cook up a tube of Jimmy Dean s, add a bunch of milk, mix up some cornstarch and water, or better yet, some pancake mix, add that and bring it to a boil.  This year I will be trying some dutch oven recipes for the bisquits, but I usually cheat and pre-bake the canned ones at home.  This is a must for us to have camping...it wouldn t be camping without it, or so I am told.[;)]

topcat7736Nope, I don t see how to do it sis. But, maybe some of the wonderful cooks on this board could come on over & show me how it s done! I could also taste the stuff to see if it would be worth my time in cooking.....just in case there s nothing to steal from surrounding sites. [:o][;)][&:]

topcat7736Okay, ladies, one thing TC s gravy has going for it is that is healthier than making white gravy from butter, flour, flour, and cream. My mom used to make " green gravy"  from chicken broth, pureed vegetables, and and little flour.

 topcat7736Thanks Sue!

See, I know what I m doing! And to you doubters, I also know how to create healthy foods....well, isn t that what my pal Sue basically said? Isn t it??? [:o][;)][&:]

topcat7736OMG, we ll never hear the end of that!    I have to say that I really love red eye gravy.   And I really love sausage gravy.  And I really love beef and mushroom gravy, and .......oh no, I have to get out of this thread fast!

topcat7736I am giving up gravy for Lent.

topcat7736Ok, I have to admit, I use gravy mix.  We started using it because it was richer, but it just make such a tastier gravy the family refuses to switch back to real gravy.

Here s the deal, you just fry up the sausage, preferably JC Potter Extra Light, cause it makes no grease in the pan.  Then you add the amount of liquid that your gravy mix calls for, now folks, it calls for water, but I substitute at least half of the amount with canned milk.  Then in another container you mix like a small amount of water with the gravy mix.  Bring the milk and sausage to a boil, pour in the gravy mix and you go sausage gravy in nothing flat!

I think I gained two pounds just thinking about it...

topcat7736Southern Living magazine has lots of gravy recipes this month.  Some look super easy for camping.  I believe you could find the recipes online at the magazine s website:  www.southernliving.com.
