I have only one double electrical outlet on the inside of the Pup and one on the outside. Is it safe to hook up extension cords or strips to run various appliances? I would be running a microwave and television inside, and possibly some smaller appliances at various times, and a dorm-size refrigerator and rope lights outside. Will this overload the electrical. I have downsized from a motorhome where everything was already inside except the TV and outside except for the lights. I never thought about overload, although I should have, but never had a problem. I will be hooked up the electrical at the site. Thanks!

The outlet in your camper is probably rated at 15A. As long as you don't use more than one large item at a time, you should be OK. At worst, you may trip a breaker. If you do, turn everything off and reset it. Only turn on what you need at one time.

You might want to invest in a 10 gage extension cord. Plug it into the extra outlet at the campsite and run it into your camper to plug in your power strip.

It's not the number of outlets that limits you; it's the shore power service limit and the trailer breakers. While you plug into a 30 amp service the PU's come with 2 circuit breakers. A 15 amp and a 20 amp. All the outlets are on the 15 amp breaker. So you are limited to 15 amps total draw before the trailer breaker trips.

The best advice I could give would be to check the data plates on anything you intend to use. It will give the input power requirements in watts. Add up all the watts and divide by 120. That will give you the amount of amps you will be drawing.
If it comes out over 15 then you'll either have to shut things off to use other things or if you do not have an air conditioner then you can use the 20 amp outlet dedicated to the 20 amp breaker normally only used for an AC, to plug in items or extension cords and use that 20 amps as well. Up to a total of 30 amps which is the shore power limit.
Or like Wavey posted you can add an extension cord directly to one of the 20 amp outlets on the shore power for extra power, IF the campground doesn't wire the 20 amp circuit breaker off the 30 amp breaker.

The coach most likely used several 15 amp circuit breakers to power the items, especially if you had a 50 amp service.
