WOW! I came up with this recipe this past Sat for my ski club.  Not one drop was left.  I'm posting this just so I can remember what I did.  :D  Let me know if you like it.  Warning: it is a little spicy, so you can adjust spices as needed for your taste.  Sorry, but I usually don't measure spices so adjust to your tast.  I approximated in list below.

Spicy Pumpkin Soup

1 finely chopped onion
3 tblsp olive oil
big spoonful butter
1 can 100% pumpkin (not pumpkin pie)
2 cans chicken broth
2 cups half/half
2 tsp ginger
2 tsp garlic powder
1 tsp chili powder
1 tblsp red pepper flakes
salt/pepper
thinly sliced roasted red peppers (Mezzetta brand is good)

In bottom of pot heat oil and butter.
Stir in onions and cook until transluscent.
Add pumpkin, one can broth, and one cup half&half.  Stir until thick.
Add spices.
Keep adding little at a time other can of broth and other cup of half&half to get nice soupy consistancy.  Sort of a bisque, or thick soup.
Let simmer for 15-20 minutes for flavors to combine.
Experiment with other spices if you wish.
Serve and top with roasted red peppers.
