Best Breakfast

Going on a ten day camp trip next week.  Love to try new recipes.  How about a challenge here, what's your favorite breakfast recipe without using a DO (we don't have one as of yet).

One of our favorite breakfasts that is easy to make is a package of skillet stuff. I know that doesn't tell you much but I can't remember the brand name of what I am referring to. It is a packet that contains potatoes, either ham or bacon, green peppers, onions, etc. They are sold in the frozen section in the grocery store. All you have to do is cook the contents of the package in some oil and then add some eggs that have been scrambled. I use egg beaters instead of fresh eggs as they are easier for traveling. I sometimes freeze the egg beaters and have this for breakfast a few days after camping. If the frozen packet of potatoes thaws it is no big deal. If you are ambitious you could make your own concoction of potatoes with other veggies and meat.

One of the guys who camps with us makes "sinkers". They are very easy to make. First fry up a pound of bacon in a frying pan over the fire. Then eat the bacon but save the grease. then scramble up about 6 eggs and pour into the hot bacon grease and keep stirring til the eggs are cooked. They look nasty but they taste awesome! If you listen closely you can hear your arteries clogging!

I agree, the prepackaged skillet breakfasts are really good and taste great as well.

Without a dutch oven, I am struggling to give you a good breakfast recipe.  However, here is one that I have loved for years ... Simple Camp donuts.

Take a couple of cans of buttermilk bisquits, poke a hole in the center and fry them in Crisco (or equivalent).  Serve hot with powdered sugar, cinnamon or other favorite topping.  Best when hot.

If you have one of those big deep frying pans, you can make a scrambled mess. More commonly known as heart attack on a plate.
We like to cook up a pound of bulk sausage (cut amounts if only 2 of you) when sausage is about half done add onions, peppers,mushrooms, if you have some ham dice it up and throw it in, maybe a little left over bacon.. Another good addition is those Wisconson snack sausages cut into little chunks or good kosher salami.
Add your eggs after all that junk cooks in some, and scramble. Throw some cheese of choice on top ..melt and serve... for added taste, fat and calories you can top it all off with sausage gravy..

Then go for that 5 mile hike to work it all off.
